Low Sugar Banana and Blueberry muffins

This is a great recipe for children/adults. It’s full of goodness (vitamin C, fibre, healthy fats) and low in sugar and saturated fat. It’s also very easy to make. Ingredients and amounts can be found in picture below.

Method:

- Mix dry components (white flour, wholemeal flour, salt, sugar, bicarbonate soda and baking powder) in a bowl. - In a separate bowl beat the egg and olive oil. Add the mashed banana and mix well. - Add dry mixture to wet mixture. - Add 2 tbs of water if batter looks too dry. - Fold blueberries into mixture. - Fill muffin cases. - Bake in the oven at 180 degrees for 25 minutes.
