This is a great recipe for children/adults. It’s full of goodness (vitamin C, fibre, healthy fats) and low in sugar and saturated fat. It’s also very easy to make. Ingredients and amounts can be found in picture below.
- Mix dry components (white flour, wholemeal flour, salt, sugar, bicarbonate soda and baking powder) in a bowl. - In a separate bowl beat the egg or egg replacement and olive oil. Add the mashed banana and mix well. - Add dry mixture to wet mixture. - Add 2 tbs of water if batter looks too dry. - Fold blueberries into mixture. - Fill muffin cases. - Bake in the oven at 180 degrees for 25 minutes.
